Citrus Vinaigrette Recipe:
You will need:
- Juice of 1 lemon
- Juice of 1 lime
- Juice of 2 or 3 oranges (*see how to make fresh squeezed juice!)
- 1 tbsp white wine vinegar
- 1 tsp fresh thyme (not dried)
- 1/2 to 2/3 cup extra virgin olive oil
- Squeeze juice from lemon, lime and oranges into blender.
- Add the white wine vinegar and thyme and blend on high speed until very smooth.
- Turn blender to lowest possible speed and open lid. With lid open, slowly drizzle in extra virgin olive oil and continue blending until mixed thoroughly. Use 1/2 cup of olive oil first, then taste to see if it needs more. Do not use more than 2/3 cup.
- Vinaigrette is ready. Will store for at least one week. May separate. If this happens, simply stir before using.
