One of my favorite healthy recipes for dinner would have to be Sheppard’s Pie. I just love a good Sheppard’s Pie. It is just one recipe, in a long list of healthy recipes for dinner, that is easy to fix and tastes great.

I use the following in My Sheppard’s Pie: Ground beef, fresh real onions, flour, milk, potatoes, butter, and corn.
First, I put the potatoes in a pan of water. Place the pan on the stove and cook the potatoes until almost done. You don’t want them to be mushy.
While I’m cooking the potatoes, I brown the ground beef in a skillet. When the ground beef is almost done, I add the diced onions and cook them together for a few minutes. After a few minutes, I strain the grease out. I leave the meat-onion mixture sitting in the strainer to continue to drain.
I put the skillet back on the stove and add a little butter. Two to three tablespoons should be enough. I melt the butter, then add an equal amount of flour. I blend the butter-flour mixture and cook this on medium heat for a minute or two. This will cook out the cereal flavor of the flour.
While I’m waiting for this to finish I drain the potatoes. Don’t let cooked potatoes sit in the water, they will lose flavor and get soggy.
I then slowly add milk, a cup at a time, to the butter-flour mixture. Do this while constantly stirring. After adding the milk wait a few seconds and see if the mixture thickens. It will thicken as it heats up, so give the mixture a chance to heat up before adding more milk. If should be about as thick as a slightly thick gravy. It if gets too thick, add some more milk.
- While you’re standing there waiting to see if it thickens, put the drained potatoes into a baking dish or an ovenproof pan of some kind.
- Pour the meat-onion-corn mixture over the potatoes. You can spread it evenly or gently fold the ingredients together.
- Then get your white sauce, yes you just made a white sauce, to the perfect thickness.
Pour your white sauce over the top of the ingredients in the baking dish. Allow room for the liquid to boil as it cooks.
- Cook 30 to 40 minutes in a 350-degree oven.
