When I think of tuna fish recipes, I think: Tasty. Simple. Healthy. In fact, for a number of years, I would have considered tuna one of my favorite foods. No kitchen should be without an easy tuna salad recipe.

What is the best tuna salad recipe? I’m sure every home cook has their preference. I’m gonna share TWO with you.

Ingredients:

You will need:

  • 1 can of unsalted tuna in water 
  • Juice of 1/2 lemon
  • 3/4 tbsp finely chopped parsley 
  • 6 pitted and chopped green or black olives
  • 1 1/2 tbsp mayonnaise (try my homemade mayonnaise recipe!)

Directions:

Drain tuna and mix all ingredients together in a bowl.

Can be served in several ways:

On top of a bed of mesclun greens or chopped lettuce

On slices of toasted whole grain bread

On rice cakes

On crackers (I special-order some healthy delicious crackers from two great online companies: www.oneluckyduck.com andwww.aimeeslivinmagic.com).

Easy tuna salad recipe #2

Easy tuna salad recipe #2 is the brainchild of yours truly. Now, I know Josh’s tuna salad is mighty good, but sometimes it’s good to go even simpler:

Ingredients:

1 can unsalted tuna in water

2 tbsp mayonnaise (try my easy homemade mayonnaise recipe!)

1 large soft tomato, diced

Mesclun greens or chopped lettuce of your choice (romaine, red leaf and green leaf are excellent)

Directions:

  1. Drain tuna and place in small bowl
  2. Add mayo and mix well together
  3. In a separate medium-sized bowl, place the mesclun greens or chopped lettuce (about 2 large handfuls)
  4. Add the diced tomato: sun dried tomato recipes
  5. Place tuna on top. Enjoy!
