Healthy nutritious snack foods don’t have to be complicated. In this delicious coconut recipe, I use a few simple and healthy ingredients to make a tasty Almond-Coconut Dip:

Healthy nutritious snack foods: Almond Coconut Dip:
You will need:
- 1 cup raw almonds (pre-soaked overnight in water)
- 1/2 cup water
- 3 tbsp shredded unsweetened coconut
- 1 tbsp raw agave nectar*
*Raw agave nectar is a natural, unrefined sweetener that can be used anywhere you would normally use white sugar. Raw agave is pulled from the agave plant of Mexico. It’s absolutely nectar-like and is actually sweeter than refined sugar, but it doesn’t spike your blood sugar. Because it is raw and unrefined, all of its nutrients and enzymes are intact.
Health nuts the world over have embraced raw agave for its healthful properties.
It reminds me of a cross between maple syrup and honey. I buy mine at Whole Foods and I know it is now carried in the health food section of many grocery stores.
Just be sure you buy the raw kind, which is a dark amber color. It should clearly say RAW on the label!
- Drain almonds.
- Put all ingredients into a high-speed or other powerful blender and blend until ingredients are thoroughly mixed together. Almonds should be completely shredded.
The mixture should have a thick consistency.
This is a completely versatile dip. Here I serve it with sliced banana:

Or add a tablespoon to one of my homemade, sugar-free dessert recipes, like this Sugar Free Banana Ice Cream:
One of my favorite tips is to toast a piece of Ezekiel bread or other whole-grain bread, coat it with agave nectar or raw honey, and then coat it with a generous helping of Almond-Coconut Dip. YUM!

Ezekiel bread can be found in many grocery stores and all health food stores. It’s kept in the freezer section to prevent spoilage.Frankenfoods with a long shelf life are not foods you want in your body. If you can’t pronounce some of the ingredients in a store-bought loaf of bread, or if it’s got more than 15 ingredients, don’t buy it!
Bonus: Ezekiel bread only has 80 calories per slice. Simply pop it in your toaster and it’ll be ready in minutes! It is a perfect addition to many easy healthy recipes.
